His cooking carries the imprint of his Italian upbringing, where family tables were alive with conversation, timeless plates passed among neighbours, and food was part of everyday rhythm. At Ninetta, Marco leads the kitchen with that same spirit, creating flavours that feel genuine and bringing the warmth of an Italian community to the table. Years earlier, Marco and Antimo were cooking in different cities but within the same circle, often imagining a future project together. Ninetta is where that idea finally takes form.

Graziano de Gregorio’s journey spans Italy, the United States, and Hong Kong, where he refined a vision that is as much about atmosphere as it is about cuisine. Rooted in memories of Italian life, with tables filled with laughter and familiarity, he now brings that sensory experience into the present. At Ninetta, Graziano leads the Nonna experience, shaping moments that carry home warmth and the joy of sharing. Having worked alongside Antimo, he shares the same vision of authenticity, creating a setting where tradition feels alive and every gathering becomes a memory.

Antimo Maria Merone’s journey has taken him across Asia into MICHELIN‑starred kitchens, where he refined a distinctive balance of craft and tradition. Known for bringing stories to life in his creations, each plate carries meaning that goes beyond flavour. At Ninetta, he channels this gift into a trattoria experience shaped by rustic authenticity and Famiglia Style. Shared plates, bold flavours, and the warmth of the table reflect his belief that food is about bringing people together. For Antimo, the chance to finally build a passion project with Marco is the realisation of an idea long imagined, now alive in the spirit of Ninetta.
